J ust like Red Rooster, Samuelsson is looking forward to getting the community involved in both the neighborhood's transformation, as well as the restaurant's success. "As Manhattan chefs, we're always working with New Jersey farms and now there is an opportunity to get closer to that. We're getting to work with the local craftsman whether it's tomatoes, hazelnuts or sausage—we're looking to Newark and the nearby Jersey community for support." Marcus B&P will feature a mash-up of favorites from some of Samuelsson's other restaurants as well as highlight New Jersey staples like pizzas, pastas and influences from Newark's own Ironbound district. But behind the veil of acclaimed restaurateur and celebrity chef stardom is Samuelsson's mission to give back. His commitment to charity and paying it forward all stems from the hardships he's endured and the kindness he's encountered as a child of adoption. He explained, "Organizations like UNICEF and Red Cross have always been strong supporters of places like Ethiopia." Samuelsson became the official ambassador for UNICEF in 2000 and along with his wife, started his own charity known as Three Goats, a New York-based nonprofit which aims to improve the health and wellbeing of children, young women and families in Ethiopia. Samuelsson also serves as co-chair for C-CAP (Careers Through Culinary Arts Programs) which helps underprivileged high school students receive a culinary education. Recently, Samuelsson took a group of teens on a walking tour through Harlem where they got to explore the city's longstanding culture as well as meet with three local entrepreneurs. "These kids need mentorship and coaching. They need to know what it's like to work with someone who actually believes in them and can show them how to take their energy and turn it into self-worth. I didn't know all of this stuff growing up but I was taught this by amazing people all over the world." The chef's philanthropic efforts also extend to the work he's doing in Newark as he plans to provide free cooking classes in the future for the community at Marcus B&P. For Samuelsson, giving back isn't about the job of one man but rather teamwork, coming together to serve a bigger purpose. "None of this works without the support of the community and being in a place now where I can give back, I've realized it is the most important work that I am doing."
